LEMON CURD CUPS πŸ‹

  Easy vegan lemon curd cups are the treat for you if you are a lemon lover! This vegan lemon curd cups have only 7 ingredients and takes 10 minutes to make! Just pour this deliciousness on to a no bake raw crust made out of a mixture of walnuts, almonds, shredded coconut, dates and maple syrup. I topped it off with a silky merengue made out of aquafaba. These are served in little fancy desert glasses..... Oh la la! Ingredients: For the raw crust: 1 cup almonds 1 cup walnuts 1/2 cup shredded unsweetened coconut 5 dates 1/4 cup maple syrup Directions: In a food processor, add 1 cup of almonds and 1 cup of walnuts. Pulse a few times to break down the nuts. Add shredded coconut, 5 dates and maple syrup. Blend until you have a sticky consistency and the dough sticks together when squeezed between your fingers. Press mixture in 12 - 5.3 oz mini glass dessert bowls. Set aside. Ingredients: For the lemon curd: 1/2 cup freshly squeezed lemon juice 3/4 cup sugar 1/3 cup cornstarch or arrowro

HOMEMADE VEGAN MAYONNAISE

 Can  you imagine eating your favorite sandwich or plant based burger without mayonnaise? I don’t know about you, but I can’t! I just love the stuff. Mayonnaise has turned out to be one of those condiments that’s an inseparable part of our delicacies. But did you know that Mayo is one of the most unhealthy foods you have been eating? It’s loaded with high- fat and has a calorie dense composition, which makes it one of the most fattening foods especially when paired with your favorite foods. This homemade mayonnaise will have you screaming for more! And the best part is..... It’s healthy! Ingredients : 1 cup Avocado oil 1/2 cup plain unflavored plant based milk ( I used soy milk) 1 Tbsp lemon juice 1 Tbsp apple cider vinegar 1/2 tsp sea salt 1 large piece garlic Directions: Add all ingredients in a high speed blender and let this sit for 3-4 minutes until the milk starts to curdle. Then blend for 30 seconds. Store in a glass jar in your refrigerator. I like to use it up within 3-4

MY VEGAN VERSION OF AVGOLEMONO SOUP

  Would you believe me if I told you that 50% of my diet from October through March consist of soup.There are thousands of incredible soup recipes on the internet, but it’s those recipes that I absolutely love from either childhood or recipes that I have tried at a restaurant that I always go back to.I will never pass up a warm bowl of soup! Chicken soup used to be my favorite! But the thought of a dead bird in my meal makes my stomach turn these days. Years ago I ate at a favorite Greek restaurant. The owner was a friend, and she brought me over a bowl of AVGOLEMONO soup to try. This was no ordinary soup. There was something special about the flavors. It was rich and comforting with a silky broth that was heavily scented with lemon. Avgolemono soup is typically made with eggs, chicken and lots of lemons. Well, I veganized this soup, keeping the authentic Greek taste as the traditional version, but eliminating the animal and all animal products. I promise, you won’t be disappointed!

The perfect vegan grilled cheese sandwich πŸ₯ͺ

  When I lived in England many years ago, I was introduced to my first toastie at my sons football club. What is a toastie? There are two key things that identify the toastie. First, it has to be buttered on the outside, so it develops a crisp, golden exterior. Second, it has to be compressed by a heavy lid, cast iron weight or a special utensil that keeps the bread and filling welded together. Im sure the toastie has undergone a huge makeover in recent years, as new generations of cooks have brought new ideas of the US - Grilled Cheese to their version. Upon returning back to the US I became obsessed with a grilled cheese sandwich. I started crafting a few creative ones with slices of apple, grilled vegetables tepenade’s and savory mixes. But I couldn’t get that perfect toastie. Even though this sandwich is vegan, I have to say, this is by far the best one I have ever had! It taste like a carefully crafted gourmet sandwich.
